White chocolate pistachio cookies are an underrated classic that offer a unique and delicious flavor that you won’t be able to resist!

Ingredients:

2 cups butter

2 tablespoons rosemary

1/3 cup white sugar

1 2/3 cups brown sugar

2 eggs

1 teaspoon vanilla

2 1/2 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon cardamom

1/2 teaspoon nutmeg

1/2 cup chopped pistachios

4 oz white chocolate

Directions:

I like to brown the butter, and add chopped rosemary to it because I like the flavor more, but that's optional, you can just melt the butter. Then whisk butter and sugar together and add the egg and vanilla in one bowl.

Then combine all the other dry ingredients in another bowl. The spices are optional, but they do make for a better cookie! 

Next, combine the dry into wet ingredients and add the pistachios, whole or chopped to whatever size you prefer, and the white chocolate chunks. I add them when there are still visible flour streaks so that by the time they're incorporated the texture is perfect. 

Bake at 350°F for approx. 13-15 minutes. 

Makes about 18 cookies.
