Cauliflower Nuggets

Ingredients:

1 1/2 cups whole wheat saltines blended into crumbs

1/2 cup finely grated Parmesan cheese

1 teaspoon dried Italian seasoning

1/2 teaspoon paprika 

1/2 teaspoon onion powder

Salt & pepper to taste

1 head cauliflower cut into florets

4 eggs, lightly mixed

Marinara or favorite dipping sauce (BBQ is good too)

Directions:

Preheat the oven to 400°F and line a large sheet pan with parchment paper.

Mix dry ingredients in a medium bowl.

Dip cauliflower pieces in egg then roll in cracker and spice mixture until fully coated. 

Place on the parchment lined sheet pan.  Repeat until all cauliflower is coated and prepped on the pan.

Bake for 20 - 25 minutes until golden brown.

Serve with marinara or other dipping sauce.
