Caldo de Pollo

A richly flavored chicken soup with hearty vegetables.

Ingredients:


3-6 potatoes

4-7 carrots

1 full cabbage

Tomato bullion

2-5 chicken breasts or thighs

3-5 celery pieces

Garlic powder

Onion powder

Salt

Pepper

Paprika

1-2 limes

Directions:

Fill pot(s) halfway with water and bring to a boil.

Add a generous amount of tomato bullion, salt, pepper, onion powder, garlic powder, and paprika.

Wash all veggies.

Peel potatoes and carrots, chop carrots into thin slices, dice potatoes, roughly chop cabbage, thickly slice celery.

Once water is boiling, put potatoes and carrots into one pot and celery into the other, splitting cabbage into both (or place all veggies in one pot).

Dice chicken and season w/ salt, pepper, garlic powder, onion powder, and paprika as desired.

Cook on medium heat until fully cooked.

Once all veggies have cooked completely, mix everything equally, without straining.

Stir until all ingredients are evenly distributed.

Serve topped with fresh lime juice.
